  • Salt and Pepper, to taste
  • 2 Eggs
  • 1 Cup Panko Bread Crumbs, or more If Needed
  • 3/4 cup grated Parmesan Cheese
  • 2 Tbsp of All-Purpose Flour
  • Oil, for frying
  • 1/2 cup tomato sauce
  • 1/4 cup fresh mozzarella, grated
  • 1/4 cup chopped basil
  • 1 Tbsp Olive Oil
  • 1/2 cup grated provolone cheese
  • Spaghetti, to serve

  1. Preheat your oven to 450 degrees Fahrenheit. On a flat, level surface, place your chicken breasts and put them in a resealable freezer bag. Pound the chicken until it's around 1/2 inch thick. Season the chicken thoroughly with salt and pepper.
  2. Beat the eggs in a shallow bowl and set aside. In a separate bowl, mix the breadcrumbs and 1/2 cup of the grated parmesan cheese and set aside.
  3. Cover the chicken breasts with an even coating of flour. If 2 Tbsps of flour isn't enough, you can use more, but make sure to not use more than just enough to cover the chicken.
  4. Dip the chicken breasts in the eggs and then coat with the breadcrumb mixture. Repeat for the rest of the chicken breasts. Set aside for 10 minutes to let the mixture coat properly.
  5. Heat oil over medium-high heat in a large skillet. Don't use too much oil because this recipe doesn't call for deep-frying the chicken. Fry for 2 minutes on each side until the chicken is golden. It will cook fully in the oven.
  6. Place the chicken into a baking dish and top each breast with an equal amount of tomato sauce. Layer each breast with equal amounts of mozzarella and provolone cheese, and the chopped basil. Sprinkle the remaining 1/4 cup of parmesan cheese on top and drizzle with 1 Tbsp Olive Oil.
  7. Bake in the preheated oven, for 15-20 minutes, until cheese is bubbly and melted and chicken is fully cooked. Serve with spaghetti and enjoy!
