Japanese Niku Udon Recipe

  • 2 Tbsp Vegetable Oil
  • 2 Cup Chopped Green Onion
  • 1 lb Thinly Sliced Steak, either Sirloin or Rib-eye(Around 1-1.5 steaks)
  • 4 Servings of Udon Noodles(either 180g of dry udon noodles or 500g of frozen udon noodles)*
  • 4 soft boiled eggs, cut in half

Ingredients for cooking the steaks:

  • 2 Tbsp Soy Sauce
  • 2 Tbsp Sugar(Can be both white or brown)

Ingredients for preparing the soup:

  • 4 Cups Chicken Stock
  • 2 Tbsp Soy Sauce
  • 2 Tbsp Rice Vinegar
  • 2 Tbsp Sugar(Can be both white or brown)
  • 1 Tsp Salt


  1. In a small pot, add 4 cups of chicken stock and 2 tbsp of sugar. Add 2 tbsp of rice vinegar and 2 tbsp of soy sauce and bring it to a boil. Taste the soup and add salt accordingly to enhance the flavour. Keep at low heat. 
  2. Bring a large pot of water to a boil and add the udon noodles to it. Cook the noodles according to the package instructions. 
  3. In a large frying pan, add 2 tbsp of vegetable oil and bring to medium heat. Add the cup of green onions and cook until tender. Cut the steak into bite-sized pieces and add to the pan. 
  4. Brown the meat and don't move the meat until it's nicely seared. Once it's fully browned, add the sugar and soy sauce. When the sauce has caramelized fully, turn off the heat. 
  5. Put the noodles in a bowl and pour in the soup. Add the beef along with the sauce and top with green onions and the boiled eggs. 
  6. Enjoy!
