Ingredients:
- 2 LBS Chicken Thighs
- Salt & Pepper
- Oil
- 1 TBSP Paprika
- 2 Onions, diced
- 1 cup of Carrots, julienned & cooked
- 2 Peppers, cut into long strips
- 2 cups of Soya Sauce
- Rice, to serve
Method:
- Wash the chicken. After washing, cut into 1-inch cubes
- In a medium saucepan, heat some oil and begin stir-frying the onions
- Season the chicken with salt, pepper, and paprika
- Once the onions are golden brown and caramelized, add in the cooked carrots, peppers, and soya sauce
- In a separate saucepan, cook the chicken pieces and then add them to the original pan
- Let the mixture simmer, and wait for the soya sauce to thicken, then serve over rice
